It'd be great if we could eat human eyeballs fresh from a corpse.
I don't mind if it gets eaten in one or many bites.
I would prefer that this be as safe to eat as any other food.

If you want to cannibalize a corpse, talk to the GMs. If you want to cannibalize a corpse without the risk of disease (cause you know, the human body is filled with bacteria and shit), then you're getting your hopes a little high.
